Issan Beef Salad

Serves 4 as a part of a Thai meal.

1 tablespoons vegetable oil
300g beef rump steak
2 shallots or half medium red onion
2 spring onion, chopped coarsely
1 tablespoon fresh coriander leaves, chopped coarsely
2 tablespoons fresh mint leaves, chopped coarsely
1 teaspoon dried chilli flakes
1-2 teaspoons fish sauce
1 teaspoon white sugar
1-2 teaspoons ground parched rice
1-2 tablespoons lime or lemon juice

  • Add oil to large heated frying pan, cook beef on both sides until medium-rare or cooked as desired. Cover, stand 5 minutes; slice thinly.
  • Combine beef with remaining ingredients in large bowl; gently to combine.
  • Serve with sticky rice and fresh salad vegetables, such as cucumber, iceberg lettuce and spring onion.
