COOKING CLASSES WITH CHALOEM
Our wonderful owner and Master Chef Chaloem has created four extraordinary cooking classes to share with you.
In North Eastern Cuisine (Issan) you will learn the secrets of Issan cuisine, Chaloem will share his recipe for: som tum (green papaya salad), Larb gai (minced chicken salad), yum neua yang (Thai beef salad), gai yang (Issn grilled chicken), Kaeng om gai (fragrant coconut-free chicken curry) and sticky rice with you. Chaolem is from Issan and loves the food he grew up with.
Thai Basics is the class you have been waiting for, here you will learn how to create Penang curry paste from scratch, and then use the paste to make Penang moo (pork penang curry). You will also learn the secrets of tom yum gai (hot and spicy chicken soup), pad thai pok (vegetable pad thai) and Paladarr’s famous pla goong (prawn and ginger salad).
The course we are most excited about is Chef Loem’s favourite dishes these are the dishes that our fantastic chef most wants to share with you. He has selected moo gatee (creamy pork dip), yum tua (mixed nut salad), pad ped grapow gai (chicken, chilli and thai basil stir-fry), kaeng gai phaktong (Issan coconut-free chicken and pumpkin curry) and khao neeow ma mum (coconut sticky rice with mango).
And our Vegetarian course concentrates on delicious vegetarian Thai dishes including yum tua (mixed nut salad), larb hedt (tofu salad), kaeng om puk ruan (Issan coconut-free vegetable), kaeng luang paste (yellow curry paste) and kaeng luang pok (yellow vegetable curry).
The classes begin at 9.30am and finish at 12.30pm. At the end of the lesson students may eat the fruits of their labours with a complimentary glass of wine, or take them home to share...

Class fee: Only $150 which includes all materials and Chaloem's course recipes. A beautiful embroidered apron is available for $15.
Chaloem will share with you his personal recipes and knowledge of ingredients, as well as demonstrating the methods and techniques necessary to achieve a meal that is authentically Thai and of restaurant quality.
Chaloem has much experience in teaching Thai cookery having held classes in his Trentham restaurant before moving to Melbourne. He has also conducted sessional training for William Angliss TAFE.
